Description
The chickpea is a wonder food, enjoyed by a wide range of traditional cuisines. Also known as garbanzos or gram, these protein- and fibre-rich legumes are extremely versatile as a food. It has been said that a cup of chickpeas will give a third of recommended daily protein, and half of the fibre requirements. Chickpeas contain a wealth of nutrition, including: calcium, iron, magnesium, phosphorus, potassium, zinc, copper, selenium, vitamin C, folate, choline, beta carotene, vitamin E and vitamin K. Chickpeas also contain choline, a lesser known important nutrient that helps regulate the brain, mood, muscle control, learning, and memory, as well as the body’s metabolism. Chickpeas are best prepared after a day’s soaking in water. They can be sprouted as a snack or salad ingredient; cooked and included in stews, curries, soups, stir-fries, pilaus, etc; or enjoyed on their own, plain or spiced up; ground into a paste for a delicious hummus, ground into flour (which is a gluten-free and highly nutritious wheat flour alternative); or even made into fudge!
