Description
One person’s bean is another person’s pea! This legume is a pea that is a sub-species of cow peas although some call them black-eyed beans! Their scientific name is Vigna unguiculata subsp. Unguiculata. While they were believed to have been domesticated in Africa, they are mostly now grown in the US, and in many parts of northern Africa, where they are known as lobia or lobya. Like other legumes they are nutrient powerhouses, containing good portions of calcium, folate, protein, fibre and various vitamins, especially vitamin A.
